Pumpkin Seed Oil Dressing
3 Tbsp. Extra-Virgin Olive Oil
Tbsp.  Pumpkin Seed Oil
1 Tbsp. Dijon Mustard
2 Tbsp. Apple Cider vinegar
½ tsp. Crushed Red Pepper Flakes
Salt and Pepper to taste

Instructions: In a medium bowl, whisk all ingredients together. Pour over your favourite fall salads. Store in an airtight container and refrigerate for up to one week.

Dark Chocolate Pumpkin Muffins
2 ½ oz. Pumpkin Seed Oil
3 Eggs
1 cup Yogurt
½ cup Sugar
2 tsp. Baking Powder
¾ cup Flour
½ cup Dark Chocolate (chopped into bits)
Roasted Pumpkin Seeds (to sprinkle on top)

Separate egg whites and egg yolks. Beat the egg whites until stiff. Gradually add the sugar and continue beating until stiff peaks form. Mix in the egg yolks. Add the oil, flour, baking powder and chocolate chips. Pour into muffins tines and bake at 350° for 20 minutes. Sprinkle with pumpkin seeds when cool.
